Easy, kid friendly, protein peanut butter balls

Peanut Butter Balls

Easy, kid friendly, delicious, what else could you ask for. Although these don't really have peanut butter in them, ground peanuts are the same thing right? My kids still call them Peanut Butter Balls, so we're sticking with it.

We've melded together about 6 different recipes we've tried over the years to get an easy, kid friendly, not too complicated, recipe. 

Ingredients:

1 c peanuts (we use dry roasted, lightly salted)
2 oz unsweetened 100% cacao chocolate   
1/2 scoop Chocolate protein powder 
1/2 c dates
1/8 c coconut oil (liquid, toss in the microwave for a few seconds if needed)

Blend the solid ingredients individually in a food processor, nuts, chocolate (I like to leave mine chunky), dates and then mix in a bowl. Add in the protein powder and coconut oil and stir till evenly mixed. Roll into bitesize balls. 

I like to store in the freezer and eat frozen.
